Buddha Bowl vegan Choose your preferred base—quinoa, brown rice, or greens—then toss roasted vegetables, tofu, and a tahini drizzle. Grace says, “it’s colourful and fulfilling.”
Black Bean and Sweet Potato Tacos “Load black beans and mash roasted sweet potatoes into tortillas after seasoning with cumin. For added taste, toss salsa or guacamole.
Grace’s last advice is “Keep basics like beans, lentils, and grains constantly available in your cupboard. It greatly simplifies dinner preparation!
