She didn’t want to become someone who spent an entire day meal prepping, so she found her own rhythm: a short, efficient prep routine that set her up for success.
Every Sunday afternoon, she carved out just 90 minutes. During that time, she cooked two grains (usually brown rice and farro), roasted a big tray of seasonal vegetables, blended a homemade sauce or dressing, and prepped one or two proteins like marinated tofu or lentils.
Instead of locking herself into exact meals, Freya kept things flexible. Monday might mean a grain bowl, Tuesday a wrap, Wednesday a hearty soup using what was left.
The ingredients could mix and match, keeping meals fresh but still effortless.
“It felt like I had building blocks,” she explains. “I didn’t have to reinvent dinner every night.”
Since adopting this rhythm, Freya says she eats more balanced meals, saves money, and doesn’t fall back on processed foods when she’s tired.
“It’s vegan eating made simple,” she says. “And that’s what keeps it sustainable.”
