When Noor Chandler’s doctor advised her to lower her cholesterol, she knew her love for rich, flavorful food was about to be tested.
“I grew up in a household where dinner was an experience,” she recalls. “Lots of butter, lots of sauce, and definitely lots of cheese.”
But after her father faced a heart scare, Noor decided to take her own heart health more seriously. Still, she wasn’t ready to settle for bland.

So she got creative. Rather than focus on what she had to remove, Noor focused on what she could add: spices, herbs, citrus, and texture. Lentils simmered in smoky paprika.
Grilled eggplant with fresh mint and lemon. Salmon glazed with garlic, ginger, and a splash of tamari. She discovered that bold flavor doesn’t have to mean saturated fat.
“I started building flavor with layers—acid, heat, crunch, umami,” she says. And it worked. Her LDL numbers dropped within three months, but more importantly, she didn’t feel like she was on a diet.
Dinner became a celebration again, not a sacrifice. “I want people to know you can eat for your heart without losing your joy,” Noor says. “Flavor is not the enemy—it’s your ally.”
