The first week after her diagnosis, Ines found herself crying in the bread aisle. “Everything I normally ate was suddenly off-limits,” she recalls. “And gluten seemed to be hiding in everything—from soy sauce to veggie burgers.”

Instead of diving into the world of gluten-free substitutes, Ines decided to start with real food. “I didn’t want to spend a fortune on processed gluten-free snacks,” she explains. “I just wanted to feel good again.”
