For a while, she was stuck in a cycle of overeating one day, then barely eating the next. Her weight would swing, and so would her energy. “I didn’t want to count calories or obsess over portions,” she says. “I just wanted to feel steady.”
So she tried a new approach—meal prep, but with flexibility. Every Sunday, she cooked a few simple components: roasted veggies, quinoa or brown rice, a big batch of chickpeas, and some easy sauces.
She didn’t assign meals to specific days, but instead built each plate around what her body needed in the moment.
This made all the difference. “When I’m prepared, I eat better—without thinking about it too much,” Jolie says. “And when I’m not starving, I don’t overeat.”
Her weight has stabilized, and more importantly, so has her mindset. “Veganism isn’t just about the food,” she says. “It’s about learning how to care for yourself in a way that lasts.”
