One-pot Lentil Curry is among her favorite meals. In a pot, toss red lentils, coconut milk, chopped tomatoes, and spices including turmeric and cumin; let it boil until creamy. She says, “It’s comforting, high in protein, and only takes thirty minutes.”
Tess suggests her Vegetable-Stuffed Sweet Potatoes as a lighter choice. Roast sweet potatoes, then load them with black beans, sautéed spinach, and a dollop of guacamole. Tess notes, “It’s colorful, nutritious, and really satisfying.”
And her Creamy Avocado Pesto is always there when she wants pasta. To make delectable sauce, blend ripe avocados, fresh basil, garlic, lemon juice, olive oil. Toss it cherry tomato and whole-grain spaghetti. She winkingly says, “It’s indulgent but totally guilt-free.”
