When Kendall Walker first started a low-carb diet, she recalls being overwhelmed. “There were quite numerous guidelines! But after I streamlined things, it came far more naturally.
From Kendall’s menu, these two basic dishes are easy for beginners:
1. Pesto Zucchini Noodles “This is a low-carb variation on a classic, Kendall notes. Cut zucchini into noodles then combine with homemade pesto. “Top it with grilled chicken to get more protein.”
2. Stuffed bell peppers. Stuff hollow out bell peppers with ground turkey, chopped tomatoes, and shredded cheese inside. For twenty-five minutes, bake at 400 degrees. “It’s satisfying and really simple to prep,” Kendall notes.
Beginners should keep things basic, according to Kendall. “You’ll love the results if you concentrate on fresh, whole ingredients,” she says.
