Riley’s preferred low-carb dishes
Riley makes these at the beginning of the week for breakfast. Egg muffs. “You simply mix eggs, toss some ham, cheese, and spinach into a muffin tray and bake. They are wonderful and portable.
Lunch is zucchini noodles topped with pesto. Riley notes, “Zoodles are a game-changer.” She tosses them grilled chicken in a basic basil pesto.
Riley enjoys making a mix of chicken thighs, broccoli, and cauliflower seasoned with garlic and olive oil then roasting everything at 400°F for 30 minutes. “Minimal cleanup, maximum flavor,” she declares.
