Hazel Fox worried about losing her favorite pastries when she made the gluten-free decision. “I felt my days of savoring brownies and cookies were over,” Hazel says, laughing.
But Hazel turned creative in the kitchen rather than hopeless. She is now presenting three gluten-free treats that even her friends without gluten-free diets rave over.
1. Brownies Made from Almond flour
“These are rich, fudgy, and quite easy to make,” Hazel says. She adds dark chocolate chips for extra decadence and nutty flavor using almond flour. Her friend Jenna said, “You’d never guess they’re gluten-free,” after licking two brownies at a party.
2. Macaroons made with coconut flour
Simple macaroons made by Hazel are quite popular. She says, “just shredded coconut, egg whites, and a bit of honey or maple syrup.” Perfect for tea time or as a small dessert following dinner are these chewy, sweet bits.
3. Excellent Peanut Butter Cookies
These cookies just call for peanut butter, sugar, and an egg—three ingredients. When I’m pressed for time, Hazel explains, “They’re my go-to.” She enjoys drizzling melted chocolate on top for a treat extra-special.
Hazel maintains that gluten-free baking need not be difficult. “Everything is about experimenting and not hesitate to try something different.” Hazel’s sweets will thus satisfy everyone at the table whether you’re gluten-free or simply seeking for a fresh pleasure.
