INSTRUCTIONS

1. Combine the water, yeast, and 1 tablespoon (15 grams) of sugar in the bowl of a stand mixer fitted with the paddle attachment and mix until combined. Let sit for 5 minutes until foamy.

Add the flour, xanthan gum, salt, and remaining 2 tablespoons (30 grams) of sugar to the bowl and mix on low speed until combined. With the mixer on low speed, add the eggs and mix until just combined. Slowly add the butter and mix until everything is well combined. The dough will be very sticky.

2. Scrape down the sides of the bowl and cover with plastic wrap. Let rise in a warm, draft-free place until doubled in size, about 2 hours.

3. Preheat oven to 350°F (180°C). Grease and flour an 8 1/2 by 4 1/4 by 2 3/4-inch loaf pan.

4. Gently deflate the dough and transfer to a lightly floured surface. Roll out into a 12-inch by 18-inch rectangle. Fold the dough into thirds, like a letter, and place in the prepared pan.

5. Cover with plastic wrap and let rise until doubled in size, about 45 minutes to 1 hour.

6. Bake for 30 minutes, or until golden brown. Remove from the oven and let cool for 10 minutes before removing from the pan to finish cooling on a wire rack.
