Olivia Hart chose to change her diet once she found her cholesterol was elevated. She says, “I felt I would have to give up flavor.” But Olivia’s recipes today show that eating for heart health can be tasty and fulfilling as well.
1. Twist oats. Olivia has porridge topped with fresh fruit, flaxseeds, and a sprinkle of almond butter first thing in morning. “Oats are my cholesterol-lowering hero,” she says.
2. Bowl of Sweet Pot Buddha.Olivia finds a sweet potato Buddha bowl to be great lunch. She says, “It’s rich with vitamins, fiber, and good fats. Her dish calls for roasted sweet potatoes, chickpeas, greens, tahini dressing.
3. No-fray falafel. Olivia substitutes a baked form of fried falafel for the classic evening fare. She guarantees, “It’s just as crispy but without the added oils.” She tosses them with a cucumber-y yogurt sauce created from non-dairy yogurt.
Olivia thinks in terms of sustainable transformations. Eating heart-healthy is more about balance than about restriction. You can have fun with the process!
