Sophie Collins’ Mediterranean Diet Recipes That Are Gluten-Free

One issue Sophie Collins encountered when choosing the Mediterranean diet was her gluten sensitivity. “I started experimenting to make gluten-free versions since I didn’t want to miss out on all the fantastic flavors of the Mediterranean cuisine.” Sophie says.


Though they remain 100% gluten-free, Sophie’s recipes combine colorful, nutritious foods. Her first two selections are here:


Quinoa Tabouli topped with lemon dressing

Bulgur is used in traditional tabouli; Sophie substitutes quinoa. She comments, “It’s just as fluffy and absorbs the dressing perfectly.” Combine chopped parsley, mint, sliced cucumbers, tomatoes, and cooked quinoa. Toss olive oil, lemon juice, and a little salt. “This is light, fresh, and ideal for summer!” Sophie says.


2. Chickpea Salad with Grilled Eggplant and Vegetable

In this dish, eggplants shine. Cut and grill eggplants until soft; then toss them with roasted chickpeas, cherry tomatoes, and a sprinkle of tahini sauce. “It’s hearty, satisfying, and naturally gluten-free,” Sophie notes.


Sophie thinks the Mediterranean diet is about appreciating variation and real cuisine. She tells me not to sacrifice taste only due to dietary constraints.
