Thirty-minute Gluten-Free Dinners Made by Zoey Smith

Zoey Smith felt her dinner choices would be boring and time-consuming when her doctor advised a gluten-free diet.

” Turns out, you can whip up fantastic dinners in no time!” she explains. Zoey lists her best gluten-free dishes that are ready in thirty minutes.

1. Pesto-based zucchini noodles Zoey replaces spiralized zucchini for classic spaghetti. Made with olive oil and pine nuts, she mixes it with fresh basil pesto. She comments, “It’s light, flavorful, and gluten-free!”

2. Vegetables with Sheet Pan Lemon Chicken Zoey roasts chicken thighs along with potatoes, squash, and carrots for a one-pan marvel. She comments, “The lemon and garlic marinade brings it all together.” Prep time for this dish just calls for ten minutes!

3. Taco Night FREE of Gluten Taco night is loved in Zoey’s family. She stuffs seasoned ground turkey, shredded lettuce, and homemade guacamole inside gluten-free corn tortillas. “It’s basic and quite fulfilling,” she explains.

4. Quick Stir-Fry Thai Peanut Recipe Zoey tosses tofu, broccoli, rice noodles mixed with a sauce based on peanut butter. She says, “It takes less time to make and tastes better than takeaway”.

Her best advice? “Keep gluten-free basics including rice, corn tortillas, and almond flour constantly available in your pantry.”
