Brylee Snow was diagnosed with type 2 diabetes at 34, and she feared it would change everything about how she ate.
“I imagined a life without bread or pasta or even fruit,” she says.

But that fear didn’t last long. With the help of a nutritionist and a lot of trial and error, Brylee learned how to manage her blood sugar without giving up the foods she loved.
“The biggest shift wasn’t what I removed—it was how I combined things,” she says. By pairing carbohydrates with protein, adding more fiber, and eating more consistently throughout the day, she found balance.
Her breakfast might include oats with chia seeds and almond butter. Lunch became grilled chicken and farro salad with roasted vegetables.
Dinner? Stir-fried tofu with soba noodles and a rainbow of steamed greens. And yes—there was still room for snacks. “A few slices of apple with a handful of almonds go a long way,” she adds.
Most importantly, Brylee no longer sees food as the enemy. “Diabetes didn’t ruin my love of food,” she says. “It just gave me a new way to respect it.”
