Odessa Carr didn’t grow up eating olives, legumes, or lemony dressings. But after a family history of heart disease prompted her to take her cholesterol seriously, she found herself exploring the Mediterranean diet—and loving it.
“I thought heart-healthy eating would be boring,” she admits. “But the Mediterranean approach changed my mind.”

She traded butter for olive oil, red meat for grilled fish or chickpeas, and processed snacks for fresh fruit. But she didn’t feel deprived. “The food was vibrant, colorful, and satisfying,” she says.
Her go-to dishes now include lentil salads with lemon and parsley, roasted vegetables with tahini drizzle, and whole grain flatbreads topped with tomatoes and herbs.
“My cholesterol started improving, but more importantly, I felt lighter, more energetic,” she explains. “It didn’t feel like a diet—it felt like a way of living.”
Odessa still shares her meals with friends, hosts dinners, and enjoys dessert on weekends. “The key,” she says, “is balance—and letting food support your life, not restrict it.”
